Have you rebooted since you updated Java? If not, do so and see if the Java Control Panel options change.

Hey OCD, I have but it's still the same. When I look at Programs installed, I've got:

Java 7 Update 6 (64 bit)
Java 7 Update 21
Java SE Dev Kit 7 Update 6 (64 bit)

Should I take down the first one listed?

Remove all but Java 7 Update 21, then reboot and see if there is any change.
